Charcoal is produced by burning Wood in Furnace, Camp Fire, Barbeque and Small Oil Refinery. It is an essential ingredient for the production of Gun Powder when it is combined with Sulfur. Hold onto your charcoal, as it usually becomes very useful and annoying to gather in the later stages of progression.
